Description
Bonito belongs to the family of tuna and mackerel, which it resembles in appearance. It is fished between late spring and early summer and again at the end of September in the entire marine area of the Tuscan Archipelago. Its meat has a strong flavor, with a slight sour tendency. Very particular is our processing of the bonito sauce and cream, prepared with flavors of the archipelago.
The Slow Food Presidium of the Palamita del mare di Toscana aims to stimulate the resumption of this process and complete a short supply chain path. The recipe of the Palamita cream is part of the recipes of the Tuscan tradition.
Neither preservatives nor additives are used in the preparation. The ingredients are: Bonito, extra virgin olive oil, white wine, capers, onion, balsamic vinegar, carrot, celery. It is excellent for preparing croutons or on grilled vegetables.
